Your tee height directly affects your reported launch angle, spin, and carry.
The mechanism
Most consumer launch monitors infer launch angle from ball flight in the first few feet after impact. Tee height changes the contact point on the face, which changes spin, which changes the early-flight angle the monitor measures.
What this means
If your simulator tee is half an inch lower than your real-world driver tee, the launch monitor is reading a different swing than the one you would make on the course. Your "data" is fiction with extra steps.
